CHEF Test
Charm CHEF (Cooking Heat EFficiency) Test is the first single-use, post-process indicator of compliance with the food time-temperature profile. Designed to quickly detect undercooked meat in cooked products, the CHEF Test measures phosphatase activity as an indication of meat "doneness".
